How To Make Hot Cocoa Brownie Bites
Spray a mini muffin tin with nonstick spray and set aside.
Preheat your oven to 350 degrees Fahrenheit.
In a large mixing bowl, prepare the brownies, according to box directions.

Pour the batter into the mini muffin tin and bake for about 10 minutes, or until a toothpick inserted in the center comes out clean.

Once the brownies have baked and cooled, heat your oven to 350 again.
Remove the brownie bites from the muffin tin, and place them onto a parchment lined baking sheet.
Add 3-4 mini marshmallows to each brownie bite.

Return the bites to the oven and bake 2-3 minutes, until the marshmallows begin to puff up.
Remove from the oven and prepare the ganache.
In a microwave safe bowl, stir together chocolate chips and heavy cream.
Add the butter and microwave for 30 seconds.
Stir well, and microwave for 15 seconds more.
The ganache should be melted and well combined. If needed, you can microwave for another 30 seconds to melt completely.
Stir, and use a spoon to drop a little ganache over top of each brownie bite.

Sprinkle with sprinkles, if using, as you go.
Important Recipe Notes

Bake the mini brownie bites for 10 minutes. Do not follow the box instructions for baking.
Bake the brownies with the marshmallows for only 2-3 minutes. Once they begin to puff up, take them out of the oven.
When microwaving the chocolate chips, do so in 30 second intervals and stir in between to prevent the chocolate from burning.
Don’t wait to add the sprinkles. Add them on as soon as you put the ganache on top to ensure they stick.
