Description

These hot cocoa brownie bites are fudgy, festive, and easy to make! A fun winter treat topped with mini marshmallows for that cozy cocoa feel.


Ingredients

Units Scale
  • 1 box brownie mix + ingredients on the back (water, oil, eggs)
  • 1 1/2 cups mini marshmallows
  • 4 ounces semi sweet chocolate chips
  • 1 tbsp. unsalted butter
  • 2 tbsp. heavy cream
  • Christmas sprinkles, optional

Instructions

  1. Spray a mini muffin tin with nonstick spray and set aside.
  2. Preheat your oven to 350 degrees Fahrenheit.
  3. In a large mixing bowl, prepare the brownies, according to box directions.
  4. Pour the batter into the mini muffin tins and bake for 10 minutes.
  5. Once the brownies have baked and cooled, heat your oven to 350 again.
  6. Remove the brownie bites from the muffin tin, and place them onto a parchment lined baking sheet.
  7. Add 3-4 mini marshmallows to each brownie bite.
  8. Return the bites to the oven and bake 2-3 minutes, until the marshmallows begin to puff up.
  9. Remove from the oven and prepare the ganache.
  10. In a microwave safe bowl, stir together chocolate chips and heavy cream.
  11. Add the butter and microwave for 30 seconds.
  12. Stir well, and microwave for 15 seconds more.
  13. The ganache should be melted and well combined. If needed, you can microwave for another 30 seconds to melt completely.
  14. Stir, and use a spoon to drop a little ganache over top of each brownie bite.
  15. Sprinkle with sprinkles, if using, as you go.
