Christmas is coming and it’s time to celebrate one of the most iconic Christmas characters ever – the Grinch! These Grinch brownie bites are so easy to make (hello, box mix!) and look adorable. These brownies make a great Christmas dessert and look fabulous on dessert tables. They are even easy enough to make as a classroom treat or for a Grinch movie night!

What You’ll Need For These Grinch Brownie Bites

  • Box Brownie Mix (Plus ingredients from the box instructions (water, oil, eggs)
  • Unsalted Butter
  • Powdered Sugar
  • Whole Milk
  • Vanilla Extract
  • Salt
  • Neon Green Gel Food Color
  • Jumbo Heart Sprinkles
  • Mini Muffin Tin

How To Make Grinch Brownie Bites

Preheat your oven to 350 degrees Fahrenheit. Spray a mini muffin tin with nonstick spray.


Prepare the brownies, according to package directions.

Fill the mini muffin tin spaces 3/4 full with brownie batter.

Bake in the oven for 12-15 min, until a toothpick inserted into the center of one of the center brownie bites comes out clean.

Make the frosting. Beat together the butter and powdered sugar.

Add vanilla, salt, and a generous amount of neon green gel food coloring. Mix until well combined.


If needed, add 1-2 tbsp. milk if the frosting is too thick.


Add the frosting to a piping bag and snip off the tip.


Add a little swirl of frosting to each brownie bite, and top with a jumbo heart sprinkle.

Make the brownie batter according to the box mix. To ensure the brownies come out correctly, follow instructions for the batter.

At 12 minutes, check the brownies. Since we are cooking them in a mini muffin tin, they will cook much faster than regular brownies. As soon as you can insert a toothpick and it comes out clean, take the brownies out of the oven.

FAQ

Yes! Grab a vegan mix or gluten free brownie mix (I like King Arthur) and substitute a flax seed gel or egg replacer for the egg. Then, use plant milk for the icing and grab a vegan and gluten free food coloring.

Of course! Follow the package instructions to cook the brownies and then add icing to the entire pan and heart sprinkles.
