Description

This gingerbread loaf is moist, spiced, and easy to make! A cozy holiday quick bread perfect for breakfast, snacking, or gifting.


Ingredients

  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 2 tsp. ground ginger
  • Pinch of ground nutmeg
  • 3/4 tsp. salt
  • 1/2 cup light brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup unsulphered molasses
  • 1 tsp. vanilla extract
  • 2 large eggs
  • 1 cup buttermilk
  • Powdered sugar to top

Instructions

  1. Line a 9 inch loaf pan with parchment and set aside.
  2. Preheat your oven to 350 degrees Fahrenheit.
  3. In a medium mixing bowl, whisk together flour, baking soda, ginger, nutmeg, and salt.
  4. In a large mixing bowl, mix together the brown sugar, butter, and molasses. Add the vanilla and eggs, and mix until well combined.
  5. Alternate adding the dry mixture and the buttermilk, folding together until just combined.
  6. Pour into the parchment lined loaf pan and smooth out evenly.
  7. Bake 45-50 minutes, careful not to over bake.
  8. Allow the bread to cool completely.
  9. Then, sift the powdered sugar over top.
  10. Slice and enjoy.
