Description

Creamy Crockpot Broccoli Cheddar Soup made easy in your slow cooker! Tender broccoli, sharp cheddar & a rich, velvety base with minimal hands-on time.


Ingredients

  • 18 ounces frozen broccoli florets
  • 2 stalks celery, chopped fine
  • 1/2 medium yellow onion, diced
  • 1 tsp. garlic powder
  • 1/4 tsp. nutmeg
  • 1/2 tsp. black pepper
  • 2 tsp. chicken bouillon powder
  • 12 ounces evaporated milk
  • 2 cups chicken broth
  • 2 tbsp. flour
  • 1/3 cup grated parmesan cheese
  • 2 cups freshly shredded cheddar cheese, plus extra for topping

Instructions

  1. To the crock pot, add your broccoli.
  2. Add the celery, onion, garlic powder, nutmeg, pepper, and chicken bouillon.
  3. Add the flour, evaporated milk, and the chicken broth.
  4. Cook on low for 3-4 hours, until broccoli is fork tender.
  5. Add the parmesan cheese and shredded cheddar, and cook until the cheese is melted.
  6. Top the soup with extra shredded cheese.
