Description

Make easy crockpot shepherd’s pie with savory beef, veggies, and creamy mashed potatoes. A cozy slow cooker comfort food dinner for busy nights.

Ingredients

Units Scale
  • 1.5 lbs ground lamb or beef
  • 1 onion, diced
  • 2 carrots, peeled and chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup corn kernels
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared in advance)

Instructions

  1. In a skillet over medium heat, brown the ground lamb or beef with the onion and carrots until the meat is fully cooked. Stir in the garlic. Drain any excess fat.
  2. Transfer the cooked meat to the Crock Pot. Add frozen peas, corn, diced tomatoes, beef broth, tomato paste, Worcestershire sauce, dried thyme, salt, and pepper. Mix well.
  3. Cover the Crock Pot and cook on low heat for 4-6 hours, allowing the flavors to meld and the vegetables to tenderize.
  4. Once the filling is ready, spread the mashed potatoes evenly over the top.
  5. Cover and continue cooking for an additional 30 minutes to 1 hour, or until the mashed potatoes develop a golden crust.
  6. Serve warm and enjoy this delightful slow-cooked Shepherd’s Pie straight from the Crock Pot.
