Description

Make baked Christmas chicken for a festive holiday dinner! This delicious main dish is perfect for serving alongside your favorite Christmas sides.


Ingredients

  • 4 boneless skinless chicken breasts, about 1 1/2-2 pounds
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 (14-ounce) can whole berry cranberry sauce
  • 1/3 cup fresh orange juice
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh orange zest
  • 1 teaspoon finely chopped fresh rosemary
  • 1 cup fresh cranberries
  • 1 orange, thinly sliced
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • Fresh rosemary sprigs, for garnish

Instructions

  1. Preheat the oven to 400°F. Lightly grease a 9×13-inch baking dish.
  2. Arrange the chicken breasts in a single layer in the prepared baking dish.
  3. Season the chicken evenly with the salt, black pepper, and garlic powder.
  4. In a medium bowl, stir the whole berry cranberry sauce until loosened.
  5. Add the fresh orange juice, honey, Dijon mustard, and Worcestershire sauce and whisk until well combined.
  6. Stir in the minced garlic, orange zest and chopped rosemary.
  7. Spoon the cranberry orange sauce over and around the chicken breasts, leaving some of the tops of the chicken visible.
  8. Scatter the fresh cranberries around the chicken.
  9. Tuck the orange slices around and between the chicken breasts. Keep most of the orange slices partially exposed rather than completely submerged in the sauce so they’ll remain pretty as they bake.
  10. Bake uncovered for 25 minutes.
  11. Remove the baking dish from the oven and spoon some of the cranberry orange sauce from the bottom of the dish over each chicken breast.
  12. Return the chicken to the oven and bake for another 5–15 minutes, or until the thickest part of each chicken breast reaches an internal temperature of 165°F.
  13. Spoon the warm cranberry orange glaze generously over the chicken breasts.
  14. Arrange the baked orange slices and cranberries around the chicken and garnish with fresh rosemary sprigs before serving.
